Ingredients

  • 2 cups cooked noodles (spaghetti or rice noodles)
  • 1 pound boneless, skinless chicken breast, sliced thin
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced (any color)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and season with salt and pepper. Stir-fry for about 5 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of vegetable oil. Add the bell peppers, broccoli, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  3. Add the minced garlic and ginger to the skillet and stir-fry for an additional 30 seconds until fragrant.
  4. Return the cooked chicken to the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir to combine all the ingredients.
  5. Add the cooked noodles to the skillet and toss everything together. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another minute until the sauce thickens.
  6. Serve hot, garnished with sliced green onions.

Notes

  • For a vegetarian option, substitute the chicken with tofu and use vegetable broth instead of oyster sauce.
  • Add a splash of sriracha or chili flakes for a spicy kick, or include other vegetables like carrots or zucchini for added nutrition.
