- 2 cups cooked noodles (spaghetti or rice noodles)
- 1 pound boneless, skinless chicken breast, sliced thin
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced (any color)
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- Salt and pepper to taste
- Green onions, sliced (for garnish)
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and season with salt and pepper. Stir-fry for about 5 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the bell peppers, broccoli, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Add the minced garlic and ginger to the skillet and stir-fry for an additional 30 seconds until fragrant.
- Return the cooked chicken to the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir to combine all the ingredients.
- Add the cooked noodles to the skillet and toss everything together. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another minute until the sauce thickens.
- Serve hot, garnished with sliced green onions.
Notes
- For a vegetarian option, substitute the chicken with tofu and use vegetable broth instead of oyster sauce.
- Add a splash of sriracha or chili flakes for a spicy kick, or include other vegetables like carrots or zucchini for added nutrition.
