- 2 cups fresh corn kernels (about 3 ears of corn)
- 1 cup fresh blueberries, rinsed and drained
- 1/2 red bell pepper, finely diced
- 1/4 red onion, finely chopped
- 1 jalapeño pepper, seeded and minced (optional for heat)
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon honey (optional)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the fresh corn, blueberries, red bell pepper, red onion, and jalapeño pepper if using.
- In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until well combined.
- Pour the dressing over the corn and blueberry mixture. Gently toss until all ingredients are evenly coated.
- Taste and adjust seasoning if necessary, adding more salt, pepper, or lime juice as desired.
- Cover the salsa and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve chilled or at room temperature with tortilla chips, grilled chicken, or as a topping for tacos.
Notes
- For added crunch, consider mixing in some diced cucumber or avocado.
