Description

Ingredients

  • 1 pound sirloin steak
  • 4 tablespoons unsalted butter
  • 1 head of garlic
  • 1 medium head of cauliflower, cut into florets
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F. Cut the top off the head of garlic to expose the cloves and drizzle with a little olive oil. Wrap it in aluminum foil and roast in the oven for about 30-35 minutes until soft and caramelized.
  2. While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes until tender. Drain and set aside.
  3. In a skillet, melt the butter over medium heat. Continue to cook, stirring frequently, until the butter turns a golden brown color and has a nutty aroma, about 5-7 minutes. Remove from heat and set aside.
  4. Season the sirloin steak with salt and pepper on both sides. In a separate skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes.
  5. Squeeze the roasted garlic cloves out of their skins into a mixing bowl. Add the cooked cauliflower, brown butter, and heavy cream. Use an immersion blender or a regular blender to whip until smooth and creamy. Season with salt and pepper to taste.
  6. Slice the steak against the grain and serve it alongside the whipped cauliflower. Garnish with chopped parsley.

Notes

  • For a lighter version, substitute half of the heavy cream with chicken broth.
  • Add a sprinkle of grated Parmesan cheese to the whipped cauliflower for extra flavor.
