A delicious recipe for Brown Butter Steak served with Roasted Garlic Whipped Cauliflower, perfect for a hearty meal.

- 1 pound sirloin steak
- 4 tablespoons unsalted butter
- 1 head of garlic
- 1 medium head of cauliflower, cut into florets
- 1/2 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F. Cut the top off the head of garlic to expose the cloves and drizzle with a little olive oil. Wrap it in aluminum foil and roast in the oven for about 30-35 minutes until soft and caramelized.
- While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes until tender. Drain and set aside.
- In a skillet, melt the butter over medium heat. Continue to cook, stirring frequently, until the butter turns a golden brown color and has a nutty aroma, about 5-7 minutes. Remove from heat and set aside.
- Season the sirloin steak with salt and pepper on both sides. In a separate skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes.
- Squeeze the roasted garlic cloves out of their skins into a mixing bowl. Add the cooked cauliflower, brown butter, and heavy cream. Use an immersion blender or a regular blender to whip until smooth and creamy. Season with salt and pepper to taste.
- Slice the steak against the grain and serve it alongside the whipped cauliflower. Garnish with chopped parsley.
Notes
- For a lighter version, substitute half of the heavy cream with chicken broth.
- Add a sprinkle of grated Parmesan cheese to the whipped cauliflower for extra flavor.
