  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buttermilk
  • 1 cup panko breadcrumbs
  • 1/2 cup buffalo sauce
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup crumbled blue cheese
  • 1/4 cup ranch dressing (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the flour, garlic powder, paprika, cayenne pepper, salt, and black pepper.
  3. In another bowl, pour the buttermilk.
  4. In a third bowl, place the panko breadcrumbs.
  5. Dip each shrimp first into the flour mixture, then into the buttermilk, and finally coat with panko breadcrumbs. Place the coated shrimp on the prepared baking sheet.
  6. Bake the shrimp in the preheated oven for 12-15 minutes, or until golden brown and crispy.
  7. Remove the shrimp from the oven and toss them in buffalo sauce until well coated.
  8. To assemble the tacos, warm the tortillas in a skillet or microwave.
  9. Place a layer of shredded lettuce on each tortilla, add the buffalo shrimp, and top with diced tomatoes and crumbled blue cheese. Drizzle with ranch dressing if desired.
