- 1 pound large shrimp, peeled and deveined
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup buttermilk
- 1 cup panko breadcrumbs
- 1/2 cup buffalo sauce
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup crumbled blue cheese
- 1/4 cup ranch dressing (optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a shallow bowl, combine the flour, garlic powder, paprika, cayenne pepper, salt, and black pepper.
- In another bowl, pour the buttermilk.
- In a third bowl, place the panko breadcrumbs.
- Dip each shrimp first into the flour mixture, then into the buttermilk, and finally coat with panko breadcrumbs. Place the coated shrimp on the prepared baking sheet.
- Bake the shrimp in the preheated oven for 12-15 minutes, or until golden brown and crispy.
- Remove the shrimp from the oven and toss them in buffalo sauce until well coated.
- To assemble the tacos, warm the tortillas in a skillet or microwave.
- Place a layer of shredded lettuce on each tortilla, add the buffalo shrimp, and top with diced tomatoes and crumbled blue cheese. Drizzle with ranch dressing if desired.
- Serve immediately and enjoy your delicious buffalo shrimp tacos!
