- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (red or green)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup fish stock or clam juice
- 1 cup dry white wine
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 pound shrimp, peeled and deveined
- 1 pound mussels, cleaned and debearded
- 1 pound clams, scrubbed
- 1 pound firm white fish (like cod or halibut), cut into chunks
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Crusty bread (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until fragrant.
- Add the diced tomatoes, fish stock (or clam juice), white wine, dried oregano, and red pepper flakes. Bring the mixture to a simmer.
- Once simmering, add the shrimp, mussels, clams, and white fish. Cover the pot and cook for about 5-7 minutes, or until the mussels and clams have opened and the shrimp are pink and opaque.
- Season with salt and pepper to taste. Remove from heat and let sit for a couple of minutes.
- Serve hot, garnished with fresh parsley and accompanied by crusty bread for dipping.
Notes
- For a spicier kick, add more red pepper flakes or a dash of hot sauce.
- Substitute any seafood you prefer, such as scallops or squid, to customize the stew to your taste.
