A delicious and rich Coffee Fudge Traybake that combines the flavors of coffee and chocolate in a moist, fudgy dessert.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup brewed coffee, cooled
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the melted butter, cooled coffee, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the traybake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, cut into squares and serve.
Notes
- For a mocha flavor, add 1 tablespoon of instant coffee granules to the batter.
- Top with a dusting of powdered sugar or a drizzle of chocolate ganache for an extra touch.
