Instructions
- In a large mixing bowl, combine the cottage cheese, eggs, and milk. Whisk until well blended.
- In another bowl, mix the flour, baking powder, baking soda, salt, and sugar.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray or melted butter.
- Pour an appropriate amount of batter onto the preheated waffle iron (about 1/2 cup, depending on the size of your iron). Close the lid and cook until golden brown, usually about 5 minutes.
- Carefully remove the waffle and repeat with the remaining batter.
- Serve warm with your favorite toppings such as syrup, fresh fruit, or yogurt.
