Description
A delicious and creamy chicken spaghetti dish topped with burrata and a zesty lemon butter garlic sauce.

- 8 ounces spaghetti
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 8 ounces burrata cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
- Reduce the heat to low and stir in the heavy cream, lemon juice, and lemon zest. Cook for another 2 minutes until the sauce is slightly thickened.
- Add the cooked chicken and spaghetti to the skillet, tossing to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Tear the burrata cheese into pieces and gently fold it into the pasta just before serving. Garnish with chopped parsley.
Notes
- For added flavor, consider adding a pinch of red pepper flakes for a bit of heat.
- Substitute the burrata with fresh mozzarella or goat cheese if preferred.
