  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  2. Pour in the vegetable broth and add the diced tomatoes, Italian seasoning, salt, and black pepper. Bring the mixture to a boil.
  3. Once boiling, add the cheese ravioli and reduce the heat to a simmer. Cook according to package instructions, usually about 4-5 minutes, until the ravioli are tender.
