A delicious and easy recipe for crispy air fryer eggplant, perfect as a snack or side dish.

- 2 medium eggplants, sliced into 1/2-inch rounds
- 1 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably panko)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Cooking spray or olive oil spray
Instructions
- Preheat the air fryer to 400°F.
- Sprinkle the sliced eggplant with salt and let it sit for about 30 minutes to draw out moisture. Rinse and pat dry with paper towels.
- Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and mix breadcrumbs, garlic powder, onion powder, black pepper, and paprika in a third dish.
- Dredge each eggplant slice in flour, shaking off excess, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
- Arrange the breaded eggplant slices in a single layer in the air fryer basket. Spray lightly with cooking spray.
- Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer and serve immediately.
Notes
- For extra flavor, try adding grated Parmesan cheese to the breadcrumb mixture.
- For a spicy kick, mix in some crushed red pepper flakes.
