Ingredients

  • 2 medium eggplants, sliced into 1/2-inch rounds
  • 1 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably panko)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Cooking spray or olive oil spray

Instructions

  1. Preheat the air fryer to 400°F.
  2. Sprinkle the sliced eggplant with salt and let it sit for about 30 minutes to draw out moisture. Rinse and pat dry with paper towels.
  3. Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and mix breadcrumbs, garlic powder, onion powder, black pepper, and paprika in a third dish.
  4. Dredge each eggplant slice in flour, shaking off excess, then dip in the beaten eggs, and finally coat with the breadcrumb mixture.
  5. Arrange the breaded eggplant slices in a single layer in the air fryer basket. Spray lightly with cooking spray.
  6. Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  7. Remove from the air fryer and serve immediately.
