Description

Delicious crispy salmon sliders topped with a refreshing lemon arugula slaw.


Ingredients

  • 1 pound fresh salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 4 slider buns
  • 1 cup arugula
  • 1/2 cup shredded carrots
  • 1/4 cup thinly sliced red cabbage
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a food processor, pulse the salmon until finely chopped but not pureed. Transfer to a mixing bowl.
  3. Add breadcrumbs, mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, salt, pepper, and parsley to the salmon. Mix until well combined.
  4. Form the mixture into 8 small patties and place them on the prepared baking sheet.
  5. Bake the patties for 15-20 minutes, or until golden brown and cooked through.
  6. While the salmon patties are baking, prepare the slaw. In a large bowl, combine arugula, shredded carrots, red cabbage, olive oil, lemon juice, salt, and pepper. Toss to combine.
  7. Once the salmon patties are done, assemble the sliders by placing a patty on each slider bun and topping with the lemon arugula slaw.

Notes

  • For added flavor, try mixing in some chopped green onions or dill into the salmon mixture.
  • Substitute the slider buns with lettuce wraps for a low-carb option.
