Delicious crispy salmon sliders topped with a refreshing lemon arugula slaw.

- 1 pound fresh salmon fillet, skin removed
- 1/2 cup breadcrumbs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 4 slider buns
- 1 cup arugula
- 1/2 cup shredded carrots
- 1/4 cup thinly sliced red cabbage
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a food processor, pulse the salmon until finely chopped but not pureed. Transfer to a mixing bowl.
- Add breadcrumbs, mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, salt, pepper, and parsley to the salmon. Mix until well combined.
- Form the mixture into 8 small patties and place them on the prepared baking sheet.
- Bake the patties for 15-20 minutes, or until golden brown and cooked through.
- While the salmon patties are baking, prepare the slaw. In a large bowl, combine arugula, shredded carrots, red cabbage, olive oil, lemon juice, salt, and pepper. Toss to combine.
- Once the salmon patties are done, assemble the sliders by placing a patty on each slider bun and topping with the lemon arugula slaw.
Notes
- For added flavor, try mixing in some chopped green onions or dill into the salmon mixture.
- Substitute the slider buns with lettuce wraps for a low-carb option.
