A quick and tasty delight featuring garlic, cheese, and tomatoes on crusty bread.
Ingredients

- 2 large ripe tomatoes, sliced
- 4 slices of crusty bread (such as sourdough or ciabatta)
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix the olive oil, minced garlic, oregano, salt, and pepper.
- Brush one side of each slice of bread with the garlic oil mixture.
- Place the bread slices on a baking sheet, oil side up, and bake for about 5 minutes, or until they start to turn golden.
- Remove the bread from the oven and layer the tomato slices evenly on top of each piece.
- Sprinkle the shredded mozzarella cheese over the tomatoes.
- Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a minute. Garnish with fresh basil leaves if desired before serving.
Notes
- For a spicy kick, add a sprinkle of red pepper flakes on top before baking.
- Substitute the mozzarella with feta cheese for a tangy flavor twist.
