A delicious and healthy recipe for grilled chicken breast served with sautéed garlic spinach.

- 2 boneless, skinless chicken breasts (about 1 pound total)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix together the smoked paprika, garlic powder, onion powder, dried oregano, salt, and pepper.
- Rub the spice mixture evenly over both sides of the chicken breasts.
- Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- While the chicken is baking, melt the butter in a separate skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in the lemon juice and season with salt and pepper to taste.
- Once the chicken is done, let it rest for a few minutes before slicing. Serve the chicken alongside the sautéed garlic spinach.
Notes
- For added flavor, marinate the chicken in the spice mixture for 30 minutes before cooking.
- You can substitute the spinach with kale or Swiss chard for a different taste and texture.
