Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, dried oregano, salt, and pepper.
  3. Rub the spice mixture evenly over both sides of the chicken breasts.
  4. Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  6. While the chicken is baking, melt the butter in a separate skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  7. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Stir in the lemon juice and season with salt and pepper to taste.
  8. Once the chicken is done, let it rest for a few minutes before slicing. Serve the chicken alongside the sautéed garlic spinach.

Notes

  • For added flavor, marinate the chicken in the spice mixture for 30 minutes before cooking.
  • You can substitute the spinach with kale or Swiss chard for a different taste and texture.
