  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the baby potatoes thoroughly and place them in a large pot. Cover with water and add a pinch of salt. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain the potatoes and let them cool slightly.
  4. On a baking sheet lined with parchment paper, arrange the potatoes in a single layer. Using a potato masher or the bottom of a glass, gently smash each potato until flattened but still intact.
  5. In a small bowl, mix together the melted butter, honey, garlic powder, salt, black pepper, and paprika.
  6. Brush the honey butter mixture generously over the smashed potatoes.
  7. Bake in the preheated oven for 20-25 minutes, or until the edges are crispy and golden brown.
  8. Remove from the oven and garnish with chopped parsley before serving.
