Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits (such as Heath bits)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the honey, eggs, and vanilla extract to the mixture, and beat until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the toffee bits and chopped nuts, if using.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a chocolate twist, add 1/2 cup of chocolate chips to the dough.
  • To enhance the flavor, consider adding 1 teaspoon of cinnamon or a pinch of nutmeg to the dry ingredients.
