Ingredients

  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (such as Cabernet Sauvignon)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 medium carrots, cut into 1-inch pieces
  • 4 medium potatoes, cut into chunks
  • 2 stalks celery, chopped
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it in the hot oil for about 4-5 minutes on each side until browned. Remove the roast and set aside.
  3. In the same pot, add the chopped onion and cook for about 3 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the red wine, scraping the bottom of the pot to deglaze. Let it simmer for about 2-3 minutes.
  5. Add the beef broth, diced tomatoes, tomato paste, oregano, and basil. Stir to combine, then return the seared roast to the pot.
  6. Arrange the carrots, potatoes, and celery around the roast. Cover the pot with a lid and transfer it to the preheated oven.
  7. Bake for 3 to 4 hours, or until the meat is tender and easily shreds with a fork. Check occasionally and add more broth if necessary to keep the liquid level up.
  8. Once done, remove the pot from the oven and let it rest for 10-15 minutes before serving. Garnish with chopped parsley.

Notes

  • For a richer flavor, consider adding a bay leaf or some fresh rosemary during cooking.
  • You can substitute the red wine with additional beef broth for a non-alcoholic version, or use a splash of balsamic vinegar for acidity.
