- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup fresh peaches, pitted and diced
- 1/4 cup fresh jalapeños, seeded and finely chopped
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, combine the diced peaches, jalapeños, honey, olive oil, soy sauce, garlic powder, onion powder, salt, and black pepper. Mix well to create a marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken and peach mixture onto the skewers, alternating between chicken and peach pieces.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- For a smoky flavor, add a sprinkle of smoked paprika to the marinade.
- Substitute the peaches with pineapple or mango for a tropical twist.
