A delicious and healthy Mediterranean Chicken Tzatziki Rice Bowl recipe that combines marinated chicken, fresh vegetables, and a creamy tzatziki sauce over a bed of rice.

- 2 cups cooked white rice
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup plain Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
Instructions
- In a bowl, combine olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper. Add the chicken breasts and coat evenly. Let marinate for at least 30 minutes.
- While the chicken is marinating, prepare the tzatziki sauce by mixing the Greek yogurt, lemon juice, dill, and a pinch of salt in a small bowl. Set aside in the refrigerator to chill.
- Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side, or until fully cooked and no longer pink in the center. Remove from heat and let rest for a few minutes before slicing.
- In serving bowls, layer the cooked rice, sliced chicken, diced cucumber, cherry tomatoes, and red onion.
- Drizzle the tzatziki sauce over the top and serve immediately.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the chicken marinade or serve with hot sauce.
- Substitute quinoa or cauliflower rice for a healthier grain option or to make it gluten-free.
