- 1/4 cup unsalted butter, softened
- 1 large egg

- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups assorted fresh fruit (such as strawberries, blueberries, kiwi, and bananas)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Mix well.
- Add the softened butter, egg, and vanilla extract to the dry ingredients. Mix until a dough forms.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each portion slightly with your fingers.
- Bake for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely.
- In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Once the cookie bases are completely cool, spread a layer of the cream cheese mixture on each mini pizza.
- Arrange the assorted fresh fruit on top of the cream cheese layer. Drizzle with lemon juice to prevent browning.
- Serve immediately or refrigerate until ready to serve.
