Description
A delightful Moroccan spiced beef and lentil stew that is hearty and full of flavor.
Ingredients

- 1 pound ground beef
- 1 cup dried green or brown lentils, rinsed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 large carrot, diced
- 1 bell pepper, diced (any color)
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups beef broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
- Stir in the minced garlic, diced carrot, and bell pepper. Cook for another 5 minutes until the vegetables are tender.
- Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the cumin, coriander, cinnamon, smoked paprika, cayenne pepper, salt, and pepper. Cook for 1-2 minutes until the spices are fragrant.
- Add the rinsed lentils, diced tomatoes (with juice), and beef broth. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if needed.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro or parsley.
Notes
- For a vegetarian version, substitute the ground beef with 1 cup of chopped mushrooms and use vegetable broth instead of beef broth.
- Add a handful of spinach or kale during the last 5 minutes of cooking for extra nutrients and color.
