Description

A delightful Moroccan spiced beef and lentil stew that is hearty and full of flavor.


Ingredients

  • 1 pound ground beef
  • 1 cup dried green or brown lentils, rinsed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 large carrot, diced
  • 1 bell pepper, diced (any color)
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  2. Stir in the minced garlic, diced carrot, and bell pepper. Cook for another 5 minutes until the vegetables are tender.
  3. Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the cumin, coriander, cinnamon, smoked paprika, cayenne pepper, salt, and pepper. Cook for 1-2 minutes until the spices are fragrant.
  5. Add the rinsed lentils, diced tomatoes (with juice), and beef broth. Bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes, or until the lentils are tender. Stir occasionally and add more broth or water if needed.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro or parsley.

Notes

  • For a vegetarian version, substitute the ground beef with 1 cup of chopped mushrooms and use vegetable broth instead of beef broth.
  • Add a handful of spinach or kale during the last 5 minutes of cooking for extra nutrients and color.
