- 2 medium carrots, peeled and grated
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped walnuts (optional)

- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated beets, grated apple, grated carrots, chopped parsley, and walnuts if using.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
- Let the salad sit for about 10-15 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
