Ingredients

  • 2 lamb shanks (about 1.5 pounds each)
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups red wine (preferably a dry variety)
  • 1 cup beef broth
  • 2 tablespoons fresh mint, chopped (plus extra for garnish)
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 tablespoon tomato paste
  • 1 bay leaf

Instructions

  1. Preheat your oven to 325°F.
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Season the lamb shanks with salt and pepper, then brown them on all sides in the hot oil. Remove the shanks and set aside.
  3. In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion is translucent.
  4. Stir in the red wine, scraping the bottom of the pot to deglaze. Bring to a simmer and let it cook for about 5 minutes.
  5. Add the beef broth, chopped mint, rosemary, thyme, carrots, celery, tomato paste, and bay leaf. Stir to combine.
  6. Return the lamb shanks to the pot, ensuring they are submerged in the liquid. Cover the pot with a lid and transfer it to the preheated oven.
  7. Cook for 2.5 to 3 hours, or until the lamb is tender and falling off the bone. Check occasionally and add more broth or water if needed to keep the shanks submerged.
  8. Once done, remove the pot from the oven. Discard the bay leaf and skim off any excess fat from the surface. Garnish with additional chopped mint before serving.
