Description

Thai Curry Soup Dumplings are a delicious and unique twist on traditional dumplings, filled with a flavorful mixture of chicken, mushrooms, and aromatic spices, all wrapped in a tender dough.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup boiling water
  • 1 tablespoon vegetable oil
  • 1 cup cooked chicken, shredded
  • 1/2 cup mushrooms, finely chopped
  • 1/4 cup green onions, chopped
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon garlic, minced
  • 1 tablespoon red curry paste
  • 1 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • Fresh cilantro, for garnish

Instructions

  1. In a mixing bowl, combine the flour and salt. Gradually add the boiling water, stirring with a fork until the dough starts to come together. Once cool enough to handle, knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  2. In a skillet over medium heat, add the vegetable oil. Sauté the ginger and garlic until fragrant, about 1 minute. Add the mushrooms and cook until softened, about 3-4 minutes. Stir in the shredded chicken, red curry paste, coconut milk, soy sauce, lime juice, sugar, and black pepper. Simmer for 5 minutes, then remove from heat and let cool slightly.
  3. Divide the dough into 12 equal pieces. Roll each piece into a circle about 3 inches in diameter.
  4. Place about 1 tablespoon of the filling in the center of each dough circle. Carefully fold the edges over the filling and pinch to seal, creating a dumpling shape.
  5. Prepare a steamer basket lined with parchment paper. Arrange the dumplings in the basket, making sure they don’t touch. Steam over boiling water for 10-12 minutes until cooked through.
  6. Serve the dumplings hot, garnished with fresh cilantro.

Notes

  • For a spicier kick, add more red curry paste to the filling.
  • You can also substitute the chicken with shrimp or tofu for a different protein option.
