- Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan with non-stick spray.
- Mash 2 1/2 cups of fresh blackberries and mix in 1/2 cup of granulated sugar. Set aside.
- In a medium bowl, whisk together 4 large eggs and 1 cup of sugar, then stir in 3/4 cup of vegetable oil and the mashed blackberries.
- In another bowl, mix 3 cups of flour, 1 teaspoon of baking soda, 1 teaspoon of salt, and 1 teaspoon of ground cinnamon.
- Combine the dry ingredients into the wet mixture gently until just combined.
- Transfer the batter to the prepared loaf pan and smooth the top. Bake for about 1 hour until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
