  • 1 cup Granulated Sugar can cut back if desired
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon optional
  • 4 large Large Eggs room temperature
  • 3/4 cup Vegetable Oil can be swapped with melted butter
  • 2 1/2 cups Fresh Blackberries or thawed frozen blackberries

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan with non-stick spray.
  2. Mash 2 1/2 cups of fresh blackberries and mix in 1/2 cup of granulated sugar. Set aside.
  3. In a medium bowl, whisk together 4 large eggs and 1 cup of sugar, then stir in 3/4 cup of vegetable oil and the mashed blackberries.
  4. In another bowl, mix 3 cups of flour, 1 teaspoon of baking soda, 1 teaspoon of salt, and 1 teaspoon of ground cinnamon.
  5. Combine the dry ingredients into the wet mixture gently until just combined.
  6. Transfer the batter to the prepared loaf pan and smooth the top. Bake for about 1 hour until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
