Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Cook noodles according to package instructions for 5-7 minutes, then drain and rinse.
  2. In a large skillet, heat a splash of vegetable broth over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the drained noodles to the skillet. Stir in soy sauce, vinegar, and Korean chilli powder. Cook for another 2-3 minutes, tossing continuously.
  4. If noodles seem dry, add a splash of vegetable broth while stirring to achieve desired consistency. Cook for another minute.
  5. Transfer to serving plates. Top with vegetables or proteins if desired, and serve hot.
