  • 3 cups Cornflakes opt for a gluten-free brand
  • 1 cup Parmesan Cheese freshly grated
  • 1 tablespoon Smoked Paprika substitute with regular paprika if preferred
  • 1 teaspoon Onion Powder can swap for garlic powder
  • 1 teaspoon Garlic Powder
Chicken
  • 2 large Eggs use flax eggs for vegan
  • 1 tablespoon Hot Sauce adjust to taste
  • 1 pound Chicken Breast (Tenderloins) substitute with thighs if desired
  • 1 tablespoon Extra Virgin Olive Oil or avocado oil
Hot Honey Sauce
  • 1/2 cup Honey maple syrup for vegan
  • 1 teaspoon Cayenne Pepper tailor to tolerance
  • 1 teaspoon Chipotle Chili Powder adjust to suit taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
Garnish
  • 1/4 cup Fresh Herbs (Thyme, Cilantro, Parsley) use any herbs available

Method
 

Instructions
  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a food processor, crush cornflakes and mix with smoked paprika, onion powder, garlic powder, and salt.
  3. Beat eggs with hot sauce. Dip chicken tenderloins in the egg mixture and coat with cornflake mixture.
  4. Arrange chicken on the baking sheet, drizzle with olive oil, and bake for 20 to 25 minutes.
  5. In a saucepan, combine honey, hot sauce, cayenne pepper, chipotle powder, garlic powder, and onion powder to make the hot honey sauce.
  6. Drizzle hot honey sauce over cooked chicken and garnish with fresh herbs.
