Ingredients
  

  • 1 cup fresh strawberries diced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup vanilla pudding mix
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream plus extra for topping
  • 12 mini graham cracker cups or 12 small cups
  • Mint leaves for garnish optional

Method
 

  1. In a medium bowl, whisk together the vanilla pudding mix, milk, and vanilla extract until smooth. Let it sit for about 5 minutes to thicken.
  2. Gently fold in the whipped cream into the pudding mixture until well combined.
  3. In each mini graham cracker cup, layer a spoonful of the pudding mixture, followed by a layer of mixed berries. Repeat the layers until the cups are filled, finishing with a layer of whipped cream on top.
  4. Garnish each trifle with a few extra berries and a mint leaf if desired.
  5. Chill the trifles in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
