  • 1 tbsp Pumpkin Spice feel free to swap in a homemade mix if preferred
  • 1 cup Dark Brown Sugar can be substituted with light brown sugar if necessary
  • 1 cup Pumpkin Puree ensure it's at room temperature for smoother mixing
  • 1/2 cup Vegetable Oil melted butter can also add a rich taste
  • 2 large Eggs
  • 1 tsp Vanilla Extract opt for pure vanilla extract for the best taste
For the Frosting
  • 1/2 cup Butter should be at room temperature for easy blending
  • 8 oz Full-Fat Cream Cheese ensure it's softened for easy mixing
  • 2 cups Powdered Sugar always sift for a flawless finish

Method
 

Cupcake Instructions
  1. Preheat your oven to 160ºC (320ºF) and prepare a 12-cup cupcake tray with liners.
  2. In a mixing bowl, whisk together flour, dark brown sugar, baking powder, baking soda, pumpkin spice, and salt.
  3. In another bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
  4. Combine wet mixture into dry ingredients and stir until just combined.
  5. Fill cupcake liners about two-thirds full and bake for 23-24 minutes.
  6. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack.
  7. For frosting, beat butter and brown sugar until creamy, then mix in cream cheese and powdered sugar.
  8. Frost cooled cupcakes as desired.
