Ingredients
  

  • 2 cups fresh corn kernels about 3 ears of corn
  • 1 cup fresh blueberries rinsed and drained
  • 1/2 red bell pepper finely diced
  • 1/4 red onion finely chopped
  • 1 jalapeño pepper seeded and minced (optional for heat)
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey optional
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the fresh corn, blueberries, red bell pepper, red onion, and jalapeño pepper if using.
  2. In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until well combined.
  3. Pour the dressing over the corn and blueberry mixture. Gently toss until all ingredients are evenly coated.
  4. Taste and adjust seasoning if necessary, adding more salt, pepper, or lime juice as desired.
  5. Cover the salsa and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Serve chilled or at room temperature with tortilla chips, grilled chicken, or as a topping for tacos.
