  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Method
 

  1. In a large bowl, combine the cooked brown rice, black beans, corn, cherry tomatoes, and olive oil. Sprinkle in the chili powder, cumin, salt, and pepper, and toss everything together until well mixed.
  2. In individual serving bowls, layer the rice and bean mixture as the base.
  3. Top each bowl with shredded lettuce, diced avocado, shredded cheddar cheese, salsa, and a dollop of sour cream.
