Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil.
  2. In a skillet over medium heat, heat 2 tablespoons of olive oil. Add finely chopped onion and sauté for 4–5 minutes until translucent. Stir in minced garlic and let cook for an additional minute. Set aside to cool.
  3. In a large mixing bowl, combine drained white beans, diced tomatoes, sautéed onion and garlic mixture, dried oregano, dried basil, and season with salt and pepper to taste. Mix well.
  4. Spread half of the bean-tomato mixture across the bottom of the greased baking dish. Sprinkle half of the shredded mozzarella and grated parmesan on top. Repeat with the remaining mixture and cheeses.
  5. Place the dish in the oven and bake for about 25–30 minutes until cheese is melted, bubbly, and golden.
  6. Remove from oven and let cool for 5 minutes before garnishing with chopped fresh parsley or basil before serving.
