- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together 2 cups of sweet rice flour, 1 cup of granulated sugar, and 1 tablespoon of baking powder.
- In another bowl, pour in 1 ½ cups of coconut milk and add ½ cup of melted butter. Stir until smooth and creamy.
- Add 2 large eggs, 1 teaspoon of vanilla extract, and a pinch of salt to your wet mixture. Whisk thoroughly.
- Pour the wet mixture into the bowl with your dry ingredients. Gently fold until just incorporated.
- Grease a 9x13-inch baking dish and pour the batter into it, spreading evenly with a spatula.
- Bake in the preheated oven for 35 to 40 minutes until golden and a toothpick comes out clean.
- Remove from oven and cool in the dish for about 10 minutes before cooling completely or slicing in the pan.
