Preheat your oven to 350°F (175°C).
Slice the croissants in half horizontally and place them on a baking sheet.
In a mixing bowl, combine the shredded chicken, chopped romaine lettuce, Caesar dressing, and grated Parmesan cheese. Season with salt and pepper to taste.
Spoon the chicken mixture evenly onto the bottom halves of the croissants.
Place the top halves of the croissants over the filling.
Bake in the preheated oven for about 10 minutes, or until the croissants are warm and slightly toasted.
Remove from the oven and drizzle with additional Caesar dressing if desired. Serve immediately.
