Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup natural peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup mini chocolate chips
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), cocoa powder, mini chocolate chips, vanilla extract, and salt.
  2. Mix all the ingredients together until well combined. You may need to use your hands to fully incorporate the mixture.
  3. Once combined, refrigerate the mixture for about 30 minutes to make it easier to handle.
  4. After chilling, scoop out tablespoon-sized portions of the mixture and roll them into balls.
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Once all the mixture is rolled into balls, refrigerate them for an additional 30 minutes to firm up.
  7. Store the energy balls in an airtight container in the refrigerator for up to one week.
