  • 1 cup Cashews soaked for smoother blend
  • 1 cup Water adjust for desired thickness
  • 2 tablespoons Olive Oil extra virgin recommended
  • 1 cup Fresh Basil Leaves lightly packed
  • to taste Salt adjust to preference
  • to taste Pepper fresh cracked preferred
For the Pasta
  • 12 ounces Pasta spaghetti suggested
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Parmesan Cheese optional, grated
  • to taste Fresh Basil for garnish

Method
 

Instructions
  1. Blend the Sauce: In a powerful blender, combine lemon juice, lemon zest, cashews, water, olive oil, basil leaves, salt, and pepper. Blend until smooth.
  2. Cook the Pasta: Boil salted water and cook pasta according to package instructions. Drain and reserve a cup of cooking water.
  3. Toss the Ingredients Together: In a large bowl, combine drained pasta and sauce, adding reserved water if necessary.
  4. Add the Cherry Tomatoes: Fold in halved cherry tomatoes, mixing gently until warmed through.
  5. Garnish and Serve: Serve pasta in bowls, garnished with Parmesan cheese and fresh basil.
