Ingredients
  

  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 8 ounces burrata cheese
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
  5. Reduce the heat to low and stir in the heavy cream, lemon juice, and lemon zest. Cook for another 2 minutes until the sauce is slightly thickened.
  6. Add the cooked chicken and spaghetti to the skillet, tossing to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Tear the burrata cheese into pieces and gently fold it into the pasta just before serving. Garnish with chopped parsley.

Notes
