Add the cauliflower florets to the egg mixture and toss until well coated.
In another bowl, combine the grated Parmesan cheese and breadcrumbs.
Take each cauliflower floret from the egg mixture and coat it in the breadcrumb mixture, pressing gently to adhere. Place the coated florets on the prepared baking sheet.
Lightly spray the tops of the cauliflower bites with cooking spray or drizzle with olive oil for extra crispiness.
Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
Remove from the oven and let cool slightly before serving.
