Preheat the oven to 400°F. Line a baking sheet with parchment paper.
In a food processor, pulse the salmon until finely chopped but not pureed. Transfer to a mixing bowl.
Add breadcrumbs, mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, salt, pepper, and parsley to the salmon. Mix until well combined.
Form the mixture into 8 small patties and place them on the prepared baking sheet.
Bake the patties for 15-20 minutes, or until golden brown and cooked through.
While the salmon patties are baking, prepare the slaw. In a large bowl, combine arugula, shredded carrots, red cabbage, olive oil, lemon juice, salt, and pepper. Toss to combine.
Once the salmon patties are done, assemble the sliders by placing a patty on each slider bun and topping with the lemon arugula slaw.
