Preparation Steps
- Preheat your oven to 180°C (350°F). Crush the biscuits until fine and mix with melted butter and castor sugar. Press into cupcake liners.
- In a stand mixer, beat cream cheese and butter until smooth. Gradually add castor sugar and lemon zest until fluffy.
- Add whole eggs one at a time, mixing well after each addition. Scrape down the sides for even mixing.
- Sift together flour, baking powder, baking soda, and salt. Fold dry mixture into the creamed batter until just combined.
- Fill each cupcake liner about two-thirds full with batter. Bake for about 25 minutes until a toothpick comes out clean.
- Allow cupcakes to cool in the pan for 10-15 minutes then transfer to a wire rack. Prepare frosting by mixing cream cheese, sugar, and milk.
- Once completely cooled, pipe the frosting on each cupcake.
