- Preheat your oven to 180°C (360°F) and line a 20 cm cake mold with parchment paper.
- In a large mixing bowl, mash one ripe banana until smooth. Stir in Greek yogurt, egg or flaxseed egg, maple syrup, vanilla extract, and a pinch of salt.
- Gradually sift in oat flour, almond flour, and baking powder into the wet mixture. Fold together gently and pour in the milk to reach a thick batter.
- Fold in optional mix-ins such as chocolate chips or berries, being careful not to deflate the batter.
- Pour the batter into the prepared mold and bake for approximately 30 minutes until a toothpick comes out clean.
- Let the cake cool in the mold for about 10 minutes, then transfer to a wire rack to cool completely.
