Step-by-Step Instructions for Extra Crispy Deep Fried Squid (Calamari)
  1. In a medium bowl, combine 200 grams of Greek yogurt, 100 grams of mayonnaise, 2 minced garlic cloves, 1 tablespoon of finely chopped dill, and 1 tablespoon of lemon juice. Season with salt and pepper to taste.
  2. Begin by cleaning 650 grams of whole squid, then slice into 2cm thick rings.
  3. In a large bowl, whisk 30 grams of fine sea salt into 1 liter of room-temperature water until fully dissolved. Add squid rings and soak for 30 minutes to 1 hour.
  4. Remove the squid rings from the brine and dry them with paper towels. Coat with all-purpose flour and let rest for 10 minutes.
  5. Heat sunflower oil in a medium pot to 175°C (347°F). Test oil's readiness with a sprinkle of flour.
  6. Carefully place squid rings in batches into the hot oil and fry for 2-4 minutes, until golden.
  7. Serve hot with lemon wedges and your prepared garlic yogurt dip.
