- In a medium bowl, combine 200 grams of Greek yogurt, 100 grams of mayonnaise, 2 minced garlic cloves, 1 tablespoon of finely chopped dill, and 1 tablespoon of lemon juice. Season with salt and pepper to taste.
- Begin by cleaning 650 grams of whole squid, then slice into 2cm thick rings.
- In a large bowl, whisk 30 grams of fine sea salt into 1 liter of room-temperature water until fully dissolved. Add squid rings and soak for 30 minutes to 1 hour.
- Remove the squid rings from the brine and dry them with paper towels. Coat with all-purpose flour and let rest for 10 minutes.
- Heat sunflower oil in a medium pot to 175°C (347°F). Test oil's readiness with a sprinkle of flour.
