  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup walnuts roughly chopped
  • 1/4 cup crumbled feta cheese optional
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the sliced fennel, apple, red onion, parsley, walnuts, and feta cheese if using.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine all the ingredients.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
