  • 1/4 cup Cilantro Chopped
  • 1 cup Cotija Cheese Crumbled
  • 1/2 cup Mayo Or Greek yogurt
For the Seasoning
  • 1 teaspoon Chili Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 2 tablespoons Lime Juice Freshly squeezed

Preparation Steps
  1. Preheat your grill to medium-high heat, aiming for 400°F (204°C). Ensure grill grates are clean.
  2. Grill each ear of corn for about 6 minutes, turning every 2 minutes until golden and charred.
  3. Remove corn from grill, allow to cool, then cut kernels off the cobs into a mixing bowl.
  4. Add diced red bell pepper, chopped jalapeno, minced garlic, and sliced red onion to the bowl.
  5. Sprinkle in chopped cilantro, crumbled Cotija cheese, and mayo, then season with chili powder, smoked paprika, salt, and lime juice.
  6. Gently fold ingredients together, being careful not to break the vegetables and cheese.
  7. Cover and refrigerate for at least 30 minutes to let flavors meld before serving.
