Ingredients
  

  • 2 large ripe tomatoes sliced
  • 4 slices of crusty bread such as sourdough or ciabatta
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the olive oil, minced garlic, oregano, salt, and pepper.
  3. Brush one side of each slice of bread with the garlic oil mixture.
  4. Place the bread slices on a baking sheet, oil side up, and bake for about 5 minutes, or until they start to turn golden.
  5. Remove the bread from the oven and layer the tomato slices evenly on top of each piece.
  6. Sprinkle the shredded mozzarella cheese over the tomatoes.
  7. Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a minute. Garnish with fresh basil leaves if desired before serving.
