- In a medium heavy-bottomed saucepan, add 1 cup of rolled oats over medium heat. Toast the oats for about 3 minutes, stirring continuously until they become nutty and slightly darker in color.
- Pour in 2 cups of almond milk and ½ cup of water into the saucepan with the toasted oats. Increase the heat slightly until the mixture reaches a gentle simmer.
- Stir in 1 tablespoon of maple syrup, ¼ teaspoon of cinnamon, ⅛ teaspoon of kosher salt, and ¼ teaspoon of vanilla extract. Mix thoroughly.
- Lower the heat to a gentle low and partially cover the saucepan. Cook the oats for about 8 minutes, stirring every minute.
- After cooking, remove from heat and stir in 1 tablespoon of almond butter. Mix until thoroughly combined.
- If the oats have thickened more than desired, gradually add additional almond milk to adjust consistency.
- Spoon your creamy almond-milk oats into bowls and get creative with toppings!
