  • 4 medium Parsnips organic, unpeeled
  • 2 tablespoons Extra Virgin Olive Oil or avocado oil
  • 2 tablespoons Fresh Thyme Leaves or dried, use at 1:2 ratio
  • 2 tablespoons Fresh Rosemary or dried, adjust amount accordingly
  • 1 teaspoon Garlic Powder or fresh garlic for more flavor
  • 1 teaspoon Flaky Sea Salt Maldon salt recommended
  • 2 tablespoons Nutritional Yeast optional, for a cheesy taste
  • 1 teaspoon Paprika optional, smoked paprika recommended
  • 1 teaspoon Lemon Zest use fresh zest for best flavor
For the Aioli
  • 1/2 cup Vegan Mayonnaise or tahini for a nutty flavor
  • 2 tablespoons Lemon Juice freshly squeezed
For Garnish
  • 2 tablespoons Fresh Parsley chopped for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 220°C (200°C for fan ovens). Set a timer for 25 minutes.
  2. Scrub and wash the parsnips thoroughly. Slice each parsnip into 1/2 cm thick fries, around 3 inches long.
  3. In a baking tray, toss parsnips with olive oil. Add thyme, rosemary, salt, nutritional yeast, garlic powder, lemon zest, and paprika. Mix well.
  4. Spread the fries in a single layer on the tray, ensuring they're not overcrowded. Bake for 25-30 minutes, flipping halfway through.
  5. Prepare the vegan aioli by mixing mayonnaise with remaining lemon zest and lemon juice. Stir until combined.
  6. Once fries are golden and crispy, remove from oven. Serve topped with parsley and lemon zest, alongside the vegan aioli.
