- In a food processor, combine sourdough starter, all-purpose flour, salt, softened butter, and cubed cheddar cheese. Pulse until a cohesive dough forms.
- Turn the dough onto a floured surface, shape into a disc, wrap in parchment paper, and refrigerate for at least 2 hours.
- Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Roll out the chilled dough to about ⅛" thickness on a floured surface.
- Use a fish-shaped cookie cutter to cut shapes and place them on the prepared baking sheet.
- Bake for about 12 minutes until golden brown; sprinkle with flaky sea salt once out of the oven.
