Ingredients
  

For the Soup Base
  • 12 cups Water or vegetable/chicken stock
  • 4 pieces Chicken Thighs skin-off, bone-in
  • 2 pieces Chicken Breasts halved
  • 6 cloves Garlic crushed
  • 6-8 pieces Whole Pimento Seeds
For the Vegetables
  • ½ medium Pumpkin cubed
  • 1-2 pieces Corn cut into 4 pieces
  • 1 large Carrot sliced
  • 2 thick slices Yellow Yam optional
  • 1 medium Chocho sliced
  • 1 medium Turnip cubed, optional
For the Aromatics
  • 6-8 sprigs Fresh Thyme
  • 2 stalks Spring Onion crushed
  • 1 piece Scotch Bonnet Pepper optional
For the Dumplings
  • 6 pieces Flour Dumpling
For Flavor Enhancement
  • 1 pkg Grace Cock Soup Mix or Chicken Noodle Soup Mix
  • 2 tsp Seasoning Salt or regular salt to taste
  • ½ tsp Fresh Cracked Black Pepper adjust to taste
Dumpling Ingredients
  • 1 cup All-Purpose Flour or gluten-free flour
  • ½ cup Water adjust for texture
  • ¼ tsp Salt

Method
 

Step‑by‑Step Instructions
  1. Wash and chop all the vegetables, including the pumpkin, carrots, and chocho. Clean and cut the chicken pieces. Crush the garlic and gather the spring onions and thyme.
  2. In a large stockpot, bring 12 cups of water to a rolling boil. Add the chicken, garlic, and pimento seeds, ensuring they are well submerged. Boil for about 10-15 minutes.
  3. Incorporate the pumpkin, corn, carrots, and optional yellow yam into the pot. Stir and cook for another 15 minutes.
  4. Once the pumpkin is tender, add chocho, turnip, dumplings, thyme, spring onion, and scotch bonnet. Stir regularly for 5-7 minutes.
  5. Reduce heat to medium-low and add Grace Cock Soup Mix, seasoning salt, and cracked black pepper. Simmer for 15-20 minutes.
