- In a large mixing bowl, combine softened cream cheese, powdered sugar, butter, key lime juice, lime zest, and vanilla extract. Blend until smooth and creamy, about 2-3 minutes.
- Gently fold in the crushed graham crackers until you have a thick dough that resembles traditional key lime pie filling.
- Scoop out portions of the dough and roll them into 1-inch balls, placing each onto a parchment-lined baking sheet. Refrigerate for 30 minutes.
- Melt white chocolate in a microwave-safe bowl in 30-second intervals until smooth. Stir in coconut oil if desired.
- Dip each chilled truffle into the melted chocolate, letting excess drip off.
- Sprinkle with graham cracker crumbs and lime zest while the chocolate is still wet. Allow to set at room temperature for 15 minutes or refrigerate for another 15 minutes.
