Preparation Steps
  1. In a large mixing bowl, combine softened cream cheese, powdered sugar, butter, key lime juice, lime zest, and vanilla extract. Blend until smooth and creamy, about 2-3 minutes.
  2. Gently fold in the crushed graham crackers until you have a thick dough that resembles traditional key lime pie filling.
  3. Scoop out portions of the dough and roll them into 1-inch balls, placing each onto a parchment-lined baking sheet. Refrigerate for 30 minutes.
  4. Melt white chocolate in a microwave-safe bowl in 30-second intervals until smooth. Stir in coconut oil if desired.
  5. Dip each chilled truffle into the melted chocolate, letting excess drip off.
  6. Sprinkle with graham cracker crumbs and lime zest while the chocolate is still wet. Allow to set at room temperature for 15 minutes or refrigerate for another 15 minutes.
