Ingredients
  

  • 2 medium zucchinis sliced into 1/4-inch rounds
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Sprinkle the sliced zucchini with salt and let it sit for about 10 minutes to draw out excess moisture. Pat dry with paper towels.
  3. In a large skillet, heat the olive oil over medium heat. Add the zucchini slices and sauté for about 5 minutes until slightly tender. Remove from heat.
  4. In a bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, garlic powder, oregano, and black pepper. Mix until well combined.
  5. In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer half of the zucchini slices over the sauce.
  6. Spread half of the ricotta mixture over the zucchini, then add another layer of marinara sauce. Repeat with the remaining zucchini, ricotta mixture, and top with the remaining marinara sauce.
  7. Sprinkle the remaining mozzarella cheese on top.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for 5 minutes before serving. Garnish with fresh basil leaves if desired.

Notes

  • For a lighter version, substitute part-skim ricotta and mozzarella cheese.
